Homestyle Fried Chicken

Ingredients

  • 3 tsp Camper Seasoning Mix
  • 3/4 cup all-purpose flour — mix with the listed Camper Seasoning Mix to make seasoned flour
  • 1/2 tsp baking powder
  • 1/4 cup cornstarch
  • 2 chicken breasts bone-in with skin — cut in half
  • 2 chicken thighs bone-in with skin
  • 2 chicken wings bone-in with skin
  • 2 chicken legs bone-in with skin
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 eggs — lightly beaten
  • 2 cups peanut oil

Cooking Steps

  1. In a large deep-frying pan with a lid, add the oil.

  2. Season both sides of the chicken with salt and pepper.

  3. Place seasoned flour mixture on a plate and then add the baking powder and cornstarch and mix until incorporated.

  4. Crack the eggs into a bowl and beat slightly.

  5. Coat each piece of chicken with the egg, careful to let excess drop back into bowl.

  6. Then gently roll each piece into the seasoned flour mixture, generously coating them.

  7. Repeat for each piece.

  8. Heat the oil until it reaches 350 degrees.

  9. The oil needs to be at this temperature when the chicken is added.

  10. Using tongs, carefully put each piece of chicken into the pan and cook for 10 minutes.

    Timer: 10 minutes

  11. After 10 minutes, turn the chicken.

  12. Cover the pan and continue to cook for 10 more minutes until the internal temperature reaches 165 degrees.

    Timer: 10 minutes

  13. The chicken pieces should sizzle throughout the cooking process.

  14. If not, raise the heat slightly if needed.

Kitchen Tips

The key to making successful fried chicken is to make sure the oil is hot enough before adding the chicken and to maintain a proper temperature throughout the cooking process. For a softer, less crunchy outer crust, omit the baking powder and cornstarch.
